I hope everyone had a nice and enjoyable weekend and got in
lots of holiday shopping without getting too stressed-out.  
The stores seem to be bumper to bumper with people these

after the holidays, we'll be "good" again and return to 
our regular scheduled program.

This year let's take a look at some festive ways to help 
us choose not only delicious and healthy foods to eat, but 
also some smart alternative cooking ideas to stay ahead of 
the game and not wreck our diet plan.

Cooking Healthy Tasty Holiday Food!

*  Leave the stuffing out of the chicken or turkey. Also, 
   make sure you remove the skin and bake your main dish on 
   a baker's rack so fatty juices drip off.

*  Instead of butter or oil, try fat-free vegetables or 
   chicken broth to sautee your veggies.  You can use broth 
   to cream mashed potatoes too. "Broth gives potatoes tons
   of flavor. You can even throw in some garlic," said 
   Tejal Parekh, a registered dietician from M.D. Anderson 
   Cancer Center Orlando.

*  Use a fat separator to skim off the fat from roasting 
   pan juices. To thicken gravy, use dry turkey-gravy mix 
   for flavor.

*  Instead of high-fat creams in staples like pumpkin pie 
   and eggnog, use low-fat or fat-free versions of 
   evaporated or condensed milk.

*  You can substitute brown sugar for a white sugar and 
   halve the amount you use in recipes.

*  You can substitute applesauce (the natural or low-sugar 
   variety) for oil when baking.  Use the same amount of 
   applesauce as you would oil.  (1 cup oil = 1 cup 

*  Instead of thick, fatty frosting on cakes, use 
   confectioner's sugar instead.

*  Making that famous green-bean casserole?  Either use 
   low-fat or fat-free cream of mushroom soup or skip it 
   altogether.  Try green beans dunked in balsamic vinegar 
   with some garlic for a new twist.

*  Toss and bake hearty veggies like carrots and parsnips 
   in sweet (light) vinaigrette.  Try Ken's Steak House 
   Raspberry Walnut Vinaigrette for extra sweetness.

*  Forget baking fat-filled pies.  Try something totally 
   different like fat-free angelfood cake with chocolate 
   sauce and raspberries to top it off. 

During a party, try these tips:

*  Watch the alcohol.  "Alcohol will really add to the 
   amount of calories that we are consuming over the 
   holidays.  As alcohol boosts our appetite, we usually 
   end up eating more,"  Parekh said.  Instead, try mulled 
   cider with cloves, cinnamon, allspice, berries and 
   orange pieces instead.

*  Start your dinner with a salad. You'll eat less during 

*  Skip the breads and choose one starch for your meal.

*  Try small samples of everything so you don't feel 
   deprived.  Key words here: small samples.

*  If you must have pie, skip the fatty crust and just 
   eat the filling.  Or opt for mini pies that encourage 
   portion control.

*  Use fat-free whipped topping to top off any dessert 
   instead of the full-fat kind.
