Here is a BUSY MOM's BREAKFAST BAKE that actually not
just Mom but the whole family will love. You make it
the night before and just pop in the oven in the morning...
just like the bed & breakfasts do. We can learn a lot
from the B&B owners about how to save time in the
morning because they do so much ahead. Ahhhh someday
I'd still love to have my own B&B in the country but
it would take a huge pot of the java because I'm not
even a morning person!

RECIPE: BUSY MOM's BREAKFAST BAKE

*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~* 

INGREDIENTS:
6 eggs
1 cup milk
6 oz. cheddar cheese, grated
1-lb sausage or bacon, crumbled
4 Hash brown patties, frozen
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dry mustard
1/2 cup chopped onion

DIRECTIONS:
Line an 8x8 baking dish with frozen hash browns. Sprinkle
hash browns with crumbled sausage or bacon. Mix together
eggs, milk, salt, pepper, and dry mustard. Pour over meat
and hash browns. Top with grated cheddar cheese. Refrigerate
overnight. Bake in a preheated oven at 350 degrees for 45
minutes to 1 hour. 

Yield: 4-6 servings

   A little tip for whipping up Scrambled Eggs 

Break eggs into a bowl; allow 2 eggs per person. Whisk
eggs with salt & pepper to taste and a teaspoon of
cream or milk for each egg. In a heavy skillet
over medium heat, melt 2 or 3 tablespoons of butter.
When the butter stops foaming, reduce heat to medium-low.
Add the eggs to the hot pan. After a minute or 2, when
the bottom and edges have begun to cook and solidify,
scrape and lift the edges with a spatula and allow the
uncooked part to run under the part lifted. Fold cooked
parts towards the center. Repeat the scraping, lifting,
and folding until the egg has formed curds. More stirring
will make small curds and less will make larger, fluffier
curds. When the curds are firm but still moist, remove
to plates or serving dish. They will continue cooking
after they leave the pan. 

For extra flavor and texture, add minced vegetables and/or
ham to the butter and saute for a few minutes before adding
the eggs.
