Hubby is taking off for his annual fishin week up North
with the buddies and I sure hope he's bringing back a
load of pike. We're standing by with all of the fixins'
for a fry and I've got a few new additions to try. We
like some spicy sides and this JALAPENO CASSEROLE recipe
is perfect for this purpose and alone too. After you bake
it, just cut into squares and top with sour cream and
sliced avocado (or whatever other favorite toppings you
like). Remember, most of the heat of the peppers is in
the seeds so if just want it a little hot, just go easy
on the seeds.

RECIPE: JALAPENO CASSEROLE
*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*
INGREDIENTS:
8 medium jalapenos, chopped.
3 cups Shredded Monterey Jack Cheese and/or cheddar cheese
2 med Tomatoes, peeled & sliced
4 large Eggs
1 1/2 cups Evaporated milk
1/4 cup Flour
1 teaspoon Salt
Sliced avocado and sour Cream for garnish
DIRECTIONS:
Preheat oven to 350 degrees. Lightly butter an 11x7 glass
baking pan. Arrange the peppers on the bottom of the
casserole. Top with an even layer of the cheese and then
the sliced tomatoes. In a large bowl, whisk the eggs until
they are frothy. Gradually whisk in the evaporated milk,
flour and salt. Carefully pour over the layers in the dish.
Bake 50- 60 minutes, or until lightly browned. Serve in
squares and garnish with sour cream and avocado slices.

ver try nachos on the grill? I'm thinking many of you have
not and you're in for a real treat! Keep this tip handy to
impress your friends at the next CUE!
NACHOS ON THE GRILL:
3-4 dozen tortilla chips
2 cups Monterey jack cheese, grated
1/3 cup bacon, fried and crumbled
1 medium red onion, chopped
4 jalapenos, chopped
Preheat grill to a hot temperature. Arrange chips in a flat
grilling pan. Cover with other ingredients. Place on grill
and turn off the grill. Let cook for about 5-10 minutes or
until cheese is melted. Keep a close eye on this one to make
sure that the cheese melts without burning.
