Hi! I'm Lizzy!! and I'm not Martha!!!
My oh my....it's Easter, almost. If you survived St. Patrick's
Day and do not have a pounding headache....then it's Easter.
I do Easter eggs...carton after carton of eggs. As I have told
you in years past, Easter egg dyeing is a contact sport in my
house. From birth on the egg dyeing days before Easter are
filled with fierce competition.
Which is all well and good but it means I have carton after
carton of, well, cartons. It doesn't feel very green to just
toss them...especially when you can have fun craft day with
them. Let your kids recycle them into dozen of tulips and
daffodils. Make the flowers for your table arrangement or
save them for a rainy spring day.

EGG CARTON FLOWERS
materials:
Egg cartons
Scissors
Glue
Green flexible straws
Colored markers
1. To make a tulip, cut an individual cup from an egg carton.
Trim the sides of the cup to form four petals (the ends can
be rounded or pointed). For a finishing touch, use a colored
marker to accent the edges of the petals.
2. For a daffodil, start with two yellow egg cups. Prepare one
as described for the tulip. Trim the second cup so that the
edge is even and the sides are about an inch tall. Fit the
short cup into the first cup and glue it in place.
3. Finally, make a small slit in the bottom of each flower and
insert the end of a straw for a stem. Now your flowers are
ready to be arranged into a cheerful centerpiece for the Easter
dinner table.

FLUTTER DELIGHTS CUPCAKES
ingredients:
1 baked cupcake
White icing
1/2 sour gummy worm
2 fruit slices, sliced in half
Gumdrop slices (optional)
2 1/2-inch pieces of shoestring licorice
1. Frost the cupcake and arrange the following on top: gummy
worm "abdomen," fruit slice "wings" (attach gumdrop detail with
icing for spots, if you like), and shoestring licorice for the
antennae.
And now for grown-ups...here is a terrific recipe for all those
hard boiled eggs. Not your typical stuffed egg....Grown up
Easter Bunnies will get a kick out of these deviled eggs that
are a little Mexican and a little Asian.
SPICY AVOCADO-STUFFED EGGS
10 large eggs
1/4 cup mayonnaise
1 tablespoon fresh lime juice
1 teaspoon wasabi paste (Japanese horseradish paste)*
1/4 teaspoon salt
Pinch freshly ground black pepper
1 plum tomato, seeded and finely chopped
1 scallion, finely chopped
1 serrano chile, seeded and minced
1 firm-ripe Hass avocado, halved, peeled, pitted, and diced
*Available at Asian markets and some supermarkets
In medium saucepan, combine eggs (in single layer) and cold water
to cover. Bring to boil, turn off heat, cover pan, and let stand
18 minutes. Drain, add cold water to cover eggs, drain again, add
several ice cubes to pan, and again add cold water to cover. Let
stand until eggs are cold, about 3 minutes.
Peel eggs and halve lengthwise. Carefully remove yolks and mash
in large bowl with fork. Add mayonnaise, lime juice, wasabi paste,
salt, and pepper and stir with fork until smooth. Fold in tomato,
scallion, and chile. Fold in avocado. Spoon mixture into whites.
Makes 20 hors d'oeuvres.
