Hi! I'm Lizzy!! and I'm not Martha!!!
I looked at what I've written for Fourth of July over the
years...seven now...can you believe it? I've written infor-
mational ones about history and flag protocol...all sorts
of interesting things including how to make a perfect 5
pointed star. Betsy Ross thought the six pointed one that
George Washington wanted was not elegant enough. He pro-
tested that no one...the new citizens of the new United
States...could make a 5 pointed star. Betsy folded a piece
of paper and with one sharp snip...a perfect 5 pointed star.
I think every one of the articles has been factual. Well,
this year I'm breaking with my own inadvertent tradition
and we're going for the good stuff. How to make the perfect
burgers and dogs for your Fourth enjoyment.

BURGERS
* For beef burgers, use ground chuck with 15 to 20 percent
fat. Ask the butcher to grind it for you and then cook it
the same day. Or if you have access to a meat grinder, grind
it yourself just before cooking to ensure optimal freshness.
* The more fat there is in your ground beef, the more the
patties will shrink.
* To enhance the flavor of the meat, you can add seasonings
and other ingredients, such as finely chopped onion, garlic
and Worcestershire sauce. The possibilities are endless!
* Your hands are the best tools for mixing the ground meat
with the other ingredients. Be sure to wash your hands well
with soap and hot water before and after mixing. Use a light
touch and DON'T OVERMIX; handling the meat too much will melt
the fat and produce an unpleasantly dense burger.
* Use your hands or a burger press to form the patties.
Again, avoid overhandling the meat and don't compact it,
which can cause the burgers to become too dense.
* Cook the burgers over a medium-hot fire in a grill. Turn
them only once and don't press down on them when cooking,
which will cause the juices to escape and encourage flare-ups.
* About 2 minute before the burgers are done, place the buns,
cut sides down, at the edge of the grill until lightly
toasted.
* Easy flipping - Use a grill basket (usually used to grill
fish) to make it easy to flip your burgers. They won't fall
apart, and you can flip up to 4 burgers at the same time.
* Juicy burgers - Press a few tiny chunks of ice cold butter,
not margarine, into each patty before cooking. Ground chuck
makes the best burgers.
* Safe hamburger cooking - To ensure safe yet delicious ham-
burgers - make patties as usual - make a deep thumbprint
(depression) in center. This allows center of burger to cook
(problem area) without burning edges to crisp.

DOGS
* Hebrew National has been voted the best dog in the USA.
* In 2005, consumers spent more than $3.9 billion on hot
dogs and sausages in U.S. supermarkets – that equals more
than 1.5 billion hot dogs and sausages bought at retail
stores alone.
* Americans will eat enough hot dogs at major league ball-
parks this year to stretch from RFK Stadium in Washington,
D.C. to AT&T Park in San Francisco.
* New Yorkers consume more hot dogs than any other city –
beating out Chicago and Los Angeles.
* Chicago's O'Hare International Airport consumes SIX times
more hot dogs – 725,000 – than Los Angeles International
Airport and LaGuardia Airport combined.
* On Independence Day, Americans will enjoy 150 million hot
dogs – enough to stretch from D.C. to L.A. over five times.
* During Hot Dog Season – Memorial Day to Labor Day –
Americans typically consume 7 billion hot dogs – or 818 hot
dogs consumed every second during that period.
* U.S. soldiers in military posts around the world – from
Fort Meyers in Arlington, Va. to Okinawa, Japan to Aqaba,
Jordon – consumed 2.4 million hot dogs last year.
* Many think that fried or grilled are much better than
steamed or boiled.
* Hot dogs are usually precooked, so you only need to heat
them up on the barbecue; plan cooking times accordingly
* Generally, you want more dog than bun. Too much bun is bad.
* What dresses the dog:
A limited number of condiments is better than putting a whole
salad bar on top of the poor piece of sausage. There is no
reason to ever have more than three things on the dog at once.
It is not always the case that chili and/or cheese on a hot
dog is a sin.
Under no circumstances, however, should you ever put ketchup
on a hot dog.
Fresh sauerkraut is wonderful.
* Without any double...Hot dogs taste better at the ball
park.
