her birthday! I know it doesn't count as a card but I
get to see if she is still following my recipes (Love
ya Care!) So a favorite dessert is in order and I can
think of the perfect little itty bitty cherry cheesecakes
akes that can just fit the bill. These are great little
nibblers and you can substitute another of your favorite
pie fillings for a variety too.

RECIPE: ITTY BITTY CHERRY CHEESECAKES 

*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~* 

INGREDIENTS:
12 vanilla wafers 
2 (8 ounce) packages cream cheese, softened 
2 eggs 
2 tablespoons lemon juice 
2/3 cup white sugar 
1 (21 ounce) can cherry pie filling 
Whipped cream for topping

DIRECTIONS:
Preheat oven to 350 degrees. Line muffin tins with 12
paper baking cups. Place a vanilla wafer in each one.
In a medium mixing bowl beat cream cheese until fluffy.
Add eggs, lemon juice, and sugar. Beat until smooth and
thoroughly combined. Fill each baking cup 2/3 full with
cream cheese mixture. Bake in preheated oven for 15 to
17 minutes. Cool on a rack. Top with fruit pie filling.
Pipe whipped cream or sweetened cream cheese into a
rosette on top of each cheesecake just prior to serving.

      A LITTLE TIP ABOUT MINI MUFFIN PANS

You can turn any pie or quiche recipe into teeny tiny
tartlets! Just cut out the crust in the appropriate
sizes with a round biscuit cutter, then gently press
a circle of dough into each muffin tin. Fill each one
no more than 2/3 full, then bake at the recommended
temperature. Remember, though, that your little pie-
lets will cook much more quickly than a full-size pie,
so begin checking them after 5 minutes.
